For the lemon loaf, preheat the oven to 350°F and grease a 9×5 loaf pan.

Make the lemon sugar by mixing together the lemon zest and sugar with your hands for 2-3 minutes. Set aside.

In a separate bowl, combine the dry ingredients.

In the bowl of a stand mixer, add the melted vegan butter, Bored Cow, apple sauce, yogurt, and sugar. Beat until combined.

Add the batter to a greased loaf pan.

Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean, let sit for 10-15 minutes, then place on a cooling rack.

For the frosting, add softened vegan cream cheese and softened vegan butter to a stand mixer. Beat on medium speed for 2-3 minutes until combined.

Slowly add in the powdered sugar and continue whipping on medium speed until a frosting forms.

Add in the lemon juice and beat the mixture on medium speed until combined.

If too thick, add in more Bored Cow until you've reached your ideal consistency.

Frost the loaf once it has cooled completely. For an extra zing, add lemon zest!
