Ingredients

1 cup Bored Cow Original

1 butternut squash

½ cup cashews (soaked overnight)

¼ cup nutritional yeast

2 tbsp olive oil

1 tbsp lemon juice

1 tsp garlic powder

1 tsp salt

½ tsp pepper

½ cup vegan cheese

¼ cup pasta water

1 box pasta of choice

Instructions

  1. Cut squash in half.

  2. Place squash halves face down on a baking tray.

  3. Roast squash at 400 degrees for 1 hour.

  4. While squash is roasting, prepare your pasta of choice.

  5. In a blender, add squash, cashews, Bored Cow, nutritional yeast, olive oil, lemon juice, and seasonings.

  6. Blend until smooth.

  7. Pour blended mixture into a pan and bring to a simmer.

  8. Add vegan cheese and mix until melted.

  9. Add cooked pasta to cheese sauce.

  10. Add in pasta water, until sauce is the desired consistency.

  11. Enjoy!
