Ingredients

½ cup Bored Cow Original

3 red bell peppers, stems removed, halved and deseeded

1 yellow onion, quartered

5 tomatoes, halved

1 small bunch of carrots, chopped (saved steams for garnish)

1-2 bulbs of garlic, halved

1 tbsp avocado oil

1 tsp dried oregano

½ tsp sea salt

Frozen gluten free gnocchi

Avocado oil spray

½ tsp garlic powder

½ cup veggie broth

Handful of fresh basil

Instructions

  1. Preheat oven to 400°

  2. Add chopped veggies to a baking sheet lined with parchment paper. Then coat with avocado, oil, sea salt, and dried oregano, using your hands to evenly distribute the oil and seasoning.

  3. Bake for 35-40 minutes.

  4. While the veggies cook, add frozen gnocchi to a bowl with garlic powder and sea salt and spray evenly with avocado oil.

  5. Add gnocchi to the air fryer and cook at 390° for 15 minutes, stopping to toss every 5 minutes.

  6. Once the veggies are done baking and have cooled, remove bell pepper skin.

  7. Combine cooked veggies, Bored Cow, and veggie broth to a blender and blend until smooth.

  8. Pour into a pot and season with salt and pepper to taste. Add fresh basil and cook on low for 5-10 minutes.

  9. Top with crispy gnocchi and enjoy!
