Ingredients

1 cup Bored Cow Original

1 block extra-firm tofu, cubed

1 tbsp grated ginger

2 cloves minced garlic

2 tsp garam masala

1 tsp turmeric

2 tsp cumin

2 tsp red chili powder

½ tsp salt

1 tbsp olive oil

½ yellow onion, diced

7 ounces tomato puree

Chopped cilantro, for garnish

Instructions

  1. In a large bowl, add cubed tofu, ginger and garlic.

  2. Add in 1/2 the amount of your garam masala, turmeric, cumin, red chili powder, and salt.

  3. Add 1/2 cup of Bored Cow Original and gently mix to ensure the tofu is properly coated.

  4. Cover and marinate for 1-2 hours in the refrigerator.

  5. Once the tofu is marinated, add oil to a large skillet over medium heat.

  6. Once oil is hot, add the marinated tofu (saving the remaining marinade for later) and cook until browned.

  7. Remove cooked tofu, then add yellow onion to the skillet.

  8. Cook onions until browned, then add in the tomato puree and the remaining spices.

  9. Mix and cook for about 5 minutes.

  10. Add the remaining marinade and Bored Cow to your skillet and mix together.

  11. Once well mixed, add your tofu back in and fold it into the sauce, cook for another 5 minutes.

  12. Top with cilantro and serve with a side of basmati rice or naan!
