Coffee Milkshake
With just a few ingredients (read: a blender and an ice cube tray), you can make this rich and creamy vegan-friendly Coffee Milkshake. The ice cream base is made from protein-rich cashews and Bored Cow animal-free dairy. This recipe is sure to keep you cool AND caffeinated.

Ingredients

Make ahead ice cream base

1 cup Bored Cow Vanilla

1 cup raw cashews

2 tbsp agave

Milkshake:

3-4 tbsp Bored Cow Vanilla

½ of the pre-made ice cubes

1 shot espresso, or ¼ cup coffee

Instructions

Prep ahead:

  1. Place raw cashews in hot water for 15-30 minutes to soften.

  2. Drain cashews, add to blender with Bored Cow Vanilla and agave.

  3. Blend on high until smooth.

  4. Pour into ice cube trays and freeze overnight.


Milkshake:

  1.  Add ½ the frozen ice cream cubes to blender.

  2. Add in 3 tbsp of Bored Cow Vanilla and cooled coffee of choice (not to exceed ¼ cup)

  3. Blend on high, adding more Bored Cow Vanilla to reach desired consistency.

  4. Top and enjoy!
