Ingredients

1 ½ cup Bored Cow Original

4 potatoes

½ a small onion

3 tbsp gluten-free all-purpose flour

3 tbsp cold butter, diced

pinch salt

pinch pepper

½ cup shredded vegan mozzarella cheese

handful fresh dill, chopped

Instructions

  1. Preheat oven to 425 degrees and prep a small baking dish with cooking oil.

  2. Using a mandolin, or a sharp knife, thinly slice your peeled potatoes into round slices.

  3. Add 1/3 of the sliced potatoes to your baking dish.

  4. Next, add sliced onion on top, pinch of salt and pepper, 1 tbsp of flour, and 1 tbsp of diced cold butter.

  5. Repeat this layering process two more times, making sure your peeled potatoes are the top layer.

  6. Pour Bored Cow until 2/3 of the dish is covered.

  7. Bake until the Bored Cow starts to bubble, about 15 minutes, and then turn down the oven temperature to 375 degrees.

  8. Bake an additional 30-35 minutes until golden brown and creamy.

  9. Remove from oven, sprinkle on cheese, broiling on high for about 3 minutes until cheese is melted.

  10. Garnish with freshly chopped dill and serve!
