Ingredients

Custard

½ cup Bored Cow Original

1 cup of JUST Egg

¼ cup maple syrup

1 tsp cinnamon

½ tsp nutmeg

½ tsp salt

1 tbsp vanilla

Bread

6 slices good quality challah/brioche bread (¾ inch thick slices)

3 tbsp vegan butter, for frying

Instructions

  1. In a large bowl or baking dish, mix together Bored Cow, JUST egg, maple syrup, cinnamon, nutmeg, salt, and vanilla.

  2. One slice at a time, place bread into custard mixture. Let the bread soak for 30 seconds then flip the bread over to make sure it absorbs the mixture thoroughly. Let the bread rest for 1 minute on a baking sheet to release any excess mixture.

  3. In a skillet, melt 1 tbsp of vegan butter over medium-low heat. Place soaked bread in the pan and fry each side for 3-4 minutes, or until golden brown and crispy on the outside. Repeat with the remaining slices of bread.

  4. To serve, top the bread with berries, maple syrup, and a dusting of powdered sugar.
