In medium saucepan on low-medium heat, bring Bored Cow and salt to just below a simmer (around 180°F) (Approximately 8 minutes).

Add lemon juice, reduce heat, and gently stir for 2 minutes - until curds begin to form.

Remove from heat and allow to sit 15 minutes.

Use fine mesh strainer or cheesecloth, to drain animal-free whey from curds. Note: You can save the whey for bread recipes, or discard!

Add curds to a dish of your choice, top with strawberry jam and strawberry slices and enjoy!
