In a pot over medium heat, add strawberry milk, fresh strawberries, sugar, and vanilla bean powder. Heat 2 minutes, whisking often, until sugar has dissolved. Remove from heat and cool completely.

In a large bowl, whisk coconut cream until smooth. Fold cooled strawberry mixture into coconut cream. Pour mixture into popsicle molds, and freeze overnight.

Once frozen, remove from molds and place on a parchment-covered baking sheet. Place back in freezer while preparing the melted chocolate.

In a large microwave safe bowl, add chocolate chips and coconut oil. Melt in 20-second intervals, stirring between each interval, until fully melted.

Dip frozen popsicles into chocolate, and place back onto baking sheet. Immediately top with a sprinkle of crushed freeze-dried strawberries, and freeze until set.

When ready to enjoy, remove from freezer and let soften a few minutes before serving.
