We teamed up with the VegNews Test Kitchen for these Chocolate-Dipped Strawberries & Creme Pops. They’re fun to make (and eat!), are super unique, and, well, taste amazing. These creamy, chocolatey pops, use Bored Cow Strawberry milk and are a sure way to make your February 14th bites festive & delicious.

Ingredients

1 cup Bored Cow Strawberry Milk

1 cup chopped fresh strawberries

2 tablespoons sugar

½ teaspoon vanilla bean powder

¼ cup canned unsweetened coconut cream

2 cups vegan dark chocolate chips

1 tablespoon coconut oil

1 cup freeze-dried strawberries, crushed

Instructions

  1. In a pot over medium heat, add strawberry milk, fresh strawberries, sugar, and vanilla bean powder. Heat 2 minutes, whisking often, until sugar has dissolved. Remove from heat and cool completely.

  2. In a large bowl, whisk coconut cream until smooth. Fold cooled strawberry mixture into coconut cream. Pour mixture into popsicle molds, and freeze overnight.

  3. Once frozen, remove from molds and place on a parchment-covered baking sheet. Place back in freezer while preparing the melted chocolate.

  4. In a large microwave safe bowl, add chocolate chips and coconut oil. Melt in 20-second intervals, stirring between each interval, until fully melted.

  5. Dip frozen popsicles into chocolate, and place back onto baking sheet. Immediately top with a sprinkle of crushed freeze-dried strawberries, and freeze until set.

  6. When ready to enjoy, remove from freezer and let soften a few minutes before serving.

PS. This recipe also makes great homemade strawberry ice cream! Store in a covered container in freezer until ready to enjoy, and let soften a few minutes before serving.
