Thanks to Bored Cow Pumpkin Spice, you can get all of the flavors of pumpkin pie, but without the hassle of... baking a pie. These pudding cups are packed with all of the fall spices, and the best part is - they're totally vegan. This is the perfect treat to whip up for a Fall party when rolling out pie crust isn't in the cards.

Ingredients

1 1⁄2 cups Bored Cow Pumpkin Spice

1⁄2 cup unsweetened Pumpkin puree

1⁄2 cup Coconut milk

1⁄2 cup Coconut sugar

2 1⁄2 tbsp Cornstarch

1⁄2 teaspoon Cinnamon

1⁄4 teaspoon Nutmeg

1⁄4 teaspoon Turmeric

1⁄4 teaspoon Ginger

1⁄8 teaspoon All spice

2 tbsp Vegan butter

1⁄2 teaspoon vanilla extract

1⁄8 teaspoon Salt

Pumpkin Spice

Instructions

  1. Combine all dry ingredients, then added wet ingredients and stir.

  2. Bring mixture to a boil over medium heat until boiling.

  3. Once boiling, remove from heat, and add to heat-proof serving cups
    Add in the dry ingredients until you have a smooth batter.

  4. Let pudding set for 2 + hours in refrigerator.

  5. Once set and ready to serve, add vegan coconut whipped cream and garnish with a cinnamon stick!
