What do you make when you're ready for the Pumpkin Spice flavors of fall, but the lingering summer weather has you craving a cooler treat? The Pumpkin Spice Latte Ice Cream Sandwich, featuring Bored Cow Pumpkin Spice! This recipe uses a Ninja Creami or an ice cream machine to churn up deliciously creamy pumpkin spice coffee ice cream, and then sandwiches it between your two favorite cookies. If you're smart, you'll make a double batch to have some backup treats in your freezer!

Ingredients

2 cups Bored Cow Pumpkin Spice

¼ cup nondairy heavy cream

2 shots of espresso

¼ cup French press coffee (or any iced or cold coffee will work)

2 cookies of your choice

1/2 cup chocolate chips

Instructions

  1. Whisk all ingredients together in the Ninja Creami container (or ice cream machine body)

  2. Freeze contents for 24 hours.

  3. After contents have frozen solid, remove from freezer, and let thaw for 30 minutes.

  4. If using Ninja Creami, spin the thawed mixture once on 'Lite ice cream' mode on Ninja Creami, then add 1tbsp more of Bored Cow, and re-spin on 'Lite ice cream' mode. 

  5. If using a regular ice cream maker, churn the mixture until creamy.

  6. Spread the ice cream mixture between two cookies of your choice, and roll in chocolate chips.
