Ingredients

Cookies

1 ¼ cups gluten-free flour

¾ cup almond flour

¾ cup brown sugar

1 ½ teaspoon ground cinnamon

½ teaspoon ground ginger

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon sea salt

5 tablespoons sunflower seed or grape seed oil

¼ cup molasses

¼ cup warm water

1 teaspoon pure vanilla extract

Orange buttercream filling

2-3 tablespoons Bored Cow

½ cup non-hydrogenated shortening

2 cups sifted powdered sugar

1 teaspoon orange zest

½ teaspoon pure vanilla extract

Instructions

Cookies

  1. Preheat oven to 350 degrees.

  2. In a medium bowl, mix together flour, almond flour, brown sugar, cinnamon, ginger, baking powder, baking soda and salt.

  3. Next, add oil, molasses, water and vanilla and stir until dough is well combined.

  4. Using your hands, or a spoon, make round balls of cookie dough, and place onto lined baking sheet.

  5. Slightly press down dough balls with fingers, or a spoon.

  6. Bake for 13-15 minutes.

  7. Let cool.

Filling

  1. Cream your shortening until soft, or for about 1 minute.

  2. Add powdered sugar, Bored Cow, orange zest and vanilla.

  3. Whip until light and fluffy.

  4. Add filling in between your cooled cookies to make cookie sandwiches!

  5. Enjoy!
