Ingredients

1 cup Bored Cow Original

1 box chocolate cake mix

3 flax eggs (1 tbsp ground flax seed mixed with 3 tbsp water)

½ cup oil

Chocolate Coating

1 cup chocolate chips

1 tsp olive oil

Instructions

  1. Prep chocolate cake as directed on package, subbing in Bored Cow for water, flax eggs for eggs, and oil.

  2. Stir until well combined.

  3. Cook chocolate cake as directed on package.

  4. Immediately after cake is fully baked, transfer the hot cake into a mixer.

  5. Mix on medium speed.

  6. Scoop out mixture into approximately 12 cake balls, using your hands as needed to form the balls.

  7. Melt 1 cup of chocolate chips in the microwave, about 30-60 seconds.

  8. Add 1 tsp of olive oil into the melted chocolate to create a ganache-like texture.

  9. Dip each cake truffle into the chocolate mixture, and top with sprinkles as desired.

  10. Let truffles chill in the fridge 1-2 hours, or until chocolate coating hardens.

  11. Enjoy!
