Ingredients
Lemon cups
2-3 small to medium lemons, zested
Filling
¼ cup Bored Cow Vanilla
½ tbsp corn starch
1 tbsp sugar
2 tbsp lemon juice
1 tsp lemon zest
*Optional: a pinch of turmeric for color
Instructions
Prep lemon cups by zesting then cutting each lemon in half (lengthwise) and juicing.
Set lemon juice and lemon zest aside.
Using a small knife, loosen the inside of the lemon from the rind, then use a spoon to take the fruit out entirely. Now your lemon cups are ready to go!
To prepare the filling, add all filling ingredients to a pot and whisk thoroughly.
Cook over medium heat, continuing to whisk until mixture thickens (~5 min).
Remove from heat and let cool.
Once cool, fill lemon cups with mixture, and allow them to set in the fridge for 15-30 minutes.
Enjoy right away, or keep these in the fridge for up to one week.
