Ingredients

Lemon cups

2-3 small to medium lemons, zested

Filling

¼ cup Bored Cow Vanilla

½ tbsp corn starch

1 tbsp sugar

2 tbsp lemon juice

1 tsp lemon zest

*Optional: a pinch of turmeric for color

Instructions

  1. Prep lemon cups by zesting then cutting each lemon in half (lengthwise) and juicing.

  2. Set lemon juice and lemon zest aside.

  3. Using a small knife, loosen the inside of the lemon from the rind, then use a spoon to take the fruit out entirely. Now your lemon cups are ready to go!

  4. To prepare the filling, add all filling ingredients to a pot and whisk thoroughly.

  5. Cook over medium heat, continuing to whisk until mixture thickens (~5 min).

  6. Remove from heat and let cool.

  7. Once cool, fill lemon cups with mixture, and allow them to set in the fridge for 15-30 minutes.

  8. Enjoy right away, or keep these in the fridge for up to one week.
